Sabudana papad SABUDANA PAPAD
Ingredients
Sago – 1 cup
Salt – 2 pinch
Food color – 2 pinch
Water – 1 cup
Method :
1. Add one cup sago in a bowl, and pour water little less one cup. Take 2 tsp sago on two separate bowls, use 2 color 1 pinches one bowl, and pour 2 tsp water also. Cover with lid and soak for overnight.
3. After soaking add colored sago with white sago, add two pinch salt and mix well.
4. Heat 3 cups of water in a steamer/pot.
5. Take a banana leaf and, glass bangles clean and brush oil.
6. Arrange the bangles on top of banana leaves, spread sago, in bangles, otherwise, you use the small lid.
Now put in a steamer and steam for 4 minutes on medium flame.
7. After 4 minutes steaming take out and cool down, put little oil on fingertips, takeout cautiously and place in a cloth, and dry under the sunlight for 2 days.
After two days SABUDANA PAPAD is ready. Deep fry the papad otherwise microwave and enjoy.

CHATPATA SARU

Ingredients
Colocasia(Saru) – 300gm
Gram flour – 1 spoon
Corn flour – 1 spoon
Carom powder – 1/2 tsp
Cumin Powder – 1/2 tsp
Coriander powder – 1/2 tsp
Black pepper powder – 1/2 tsp
Chaat masala powder – 1/2 tsp
Red chili powder – 1 tsp
Lemon juice – 1 tbsp

Oil

Salt to taste

For coating
Gram flour – 1 spoon
Corn flour – 1 spoon
Garam masala powder – 1/2 tsp
Salt little

Method
1. Wash and boil the colocasia in a pressure cooker. After boiling let the colocasia cool down.
2. Peel and cut the colocasia into small peices. Add lemon juice and salt. Mix it well, cover with a lid, and let it rest for one hour in the refrigerator.
3. After one hour add carom powder, cumin powder, coriander powder, black pepper powder, red chili powder, and chaat masala powder and mix it well.
4. Now add gram flour and cornflour. Mix it well.
For outer coating-
5. In a plate take gram flour, cornflour, garam masala powder, and salt. Mix it well and roll spicy colocasia to coat it one by one. Press the coated colocasia to flatten it.
6. Heat oil in a pan and deep fry till both sides are golden in color. Colocasia snacks(Chatpata Arbi/Saru) is ready to be served.
Special fasting recipes for making your fasting days extra special. Replace the salt with rock salt or saunda namak and cornflour or gram flour with Rajhira flour or favorite fasting flour.

FASTING SPECIAL
INGREDIENTS:
Sago (sabudana) – 1/2 cup
Water – 3/4 cup
Potato boiled – 1
Ginger crushed – 1 tsp
Carrot fine chopped – 3/4 cup
Green chili chopped – 1 tsp
Lemon juice – 1 tbsp
Coriander leaves chopped – 2 tbsp
Spice powder – 1 tsp
Ghee for shallow fry
Rock salt to taste

METHOD:
1. Take sago in a grinder jar and make powder. Transfer the sago powder to another bowl, and shock for 15 – 20 minutes.
2. After 20 minutes add boiled and smashed potato, ginger, green chili, coriander leaves, lemon juice, carrot, spice pond salt. rock salt. Mix thoroughly.
3. Make small lemon size ball out of the mixture and little flatten with the help of palm.
4. Heat ghfryingin a frying pan and shallow fry the sago cutlet both side evenly till turns golden in color.
5. Tasty and chatpata fasting special SABUDANA CUTLET is ready to serve hot with salad cucumber, carrot, and chutney.
Note: – Black pepper, fennel seeds, carom seeds, coriander seeds, and cumin seeds are roasted in low flame and cool down. Make this spice powder.

SAGU CHAKUDA (FRUITS SALAD)

INGREDIENTS

  • Sago – 1/2 cup
  • Coconut scarped – ½ cup
  • Banana small(sliced) – 1p
  • Apple chopped -200gm
  • Grapes -100gm
  • Pomegranate kernels -1,2cup
  • Orange(peeled and sectioned) – 20 pcs
  • Yogurt -200gm
  • Chhena -200gm
  • Honey -1/4cup
  • Milk – 1 cup
  • Basil leaves – 10 + stone apple leaves 2 

METHOD:

  • Wash and soak sago for 4 hours in a bowl.
  • Whip curd and add to curd.
  • Add chopped apple, scrapped coconut, sliced banana, grapes, pomegranate kernel. Orange pieces, cheena, honey ( can use sugar also), milk and basil leaves and stone apple leaves.
  • Mix thoroughly.
  • You can also add seasonal fruits like mango, litchi, sapodilla(chiku/sapeta) and custard apple.
  • Serve cool.
