BREAD DAHI VADA

Bread ki Dahi vada

Ingredients:
Bread slices – 12
Grapes – 1/2 cup
Orange – 1
Pomegranate seeds – 1/2 cup
Sweet Potato( boiled) – 1
Banana – 1
White turmeric (chopped) – 1/2 tsp
Chaat masala powder -1/2 tsp
Black pepper powder – 1/4 tsp
Fresh mint leaves – 1 spoon
Rock salt to taste

For tampering curd
Curd – 500gn
Mustard seeds – 1/2 tsp
Dry red chili -1
Curry leaves – 10
Crushed ginger – 1 tsp
Oil – 1 tsp

For garnishing
Fresh green sauce
Hot and sweet red sauce
Bhujiya (sev)
Pomegranate seeds
Roasted cumin and red chili powder

Method:
1. Wash the fruits, and chop grapes into small pieces, peel and cut the bananas and sweet potatoes also into small pieces. Peel and cut the orange and remove the seeds.
2. In a bowl take grapes, orange, boiled sweet potato, pomegranate seeds, banana, white turmeric, chaat masala powder, black pepper powder, rock salt, and mint leaves. Mix it all together and keep it aside. The stuffing is ready.
3. Cut four sides of bread slices, and soak in water. Press the slice between the palms to remove the excess water. Place one tablespoon of stuffing at the center of the bread, pull all the edges together to make a bread ball. Make more bread balls like these.
4. In a bowl take the curd, add rock salt and whip it. Heat oil in a pan, add mustard seeds and crackle it, add dry red chili and curry leaves and saute it a little. Add ginger and saute it on low flame for thirty seconds. Cooldown the fried spices and add in curd. Mix all the ingredients together well. Your tempered cured is ready.
5. In a small bowl, pour the curd and place the stuffed bread balls. Pour some more curd, and green sauce, hot and sweet red sauce. Sprinkle some bhujia, roasted cumin, and red chili powder and pomegranate seeds. Healthy and tasty bread dahi vada are ready to serve.

CHATPATA CHANA BREAKFAST

Chatpata chana (breakfast)


Ingredients:

Chickpea(boiled) – 1 cup
Potato(boiled) – 1
Green peas – ½ cup

Sprouts – ½ cup

Raw mango(chopped) – ½ cup
Green chilli(chopped) – 1
Chilli flakes – 1 tsp
Onion(chopped) – ¾ cup

Sugar – 1 tbsp
Lemon juice – 1 tsp
Cumin powder(roasted) – 1 tbsp
Chat masala powder – 1 tsp
Coriander & mint(chopped)- 2 tbsp
Black salt – ½ tsp
Oil – 2 tbsp
Mustard seed – 1 tsp
Curry leaves -10
Salt to taste

Method:

* Take a pan and heat oil.
* Crackle mustard seeds.
* Add curry leaves, green chilli and onion and sauté.
* Chop boiled potato, add it along with chickpea, green peas and sprout in the pan and mix well.
* Add sugar and salt and sauté for 1 minute, and cool it down.
* Add cumin powder, chat masala powder, chilli flakes, lemon juice, raw mango, chopped coriander and mint leaves and mix well.
* Chatpata chana is ready to serve as tasty and healthy breakfast.

MAKKA CHAAT PAPDI

MAKKAI KI CHAAT

Ingredients:

Maize flour (Makki ki atta) – 1/4 cup
White flour – 1/4 cup
Oil – 1 tbsp

Mix harb powder – 1/2 tsp
Turmeric powder – 1/4 tsp
Red chilli powder – 1/2 tsp
Black pepper powder-1/2 tsp
Carrom powder (Ajwain) – 1/2 tsp
Salt to taste
Oil for deep fry
For Chaat
Boiled corn – 1 cup
Chopped tomato – 1 tbsp
Chopped onion – 1/4 cup
Chopped capsicum – 1 tbsp
Chopped green chilli – 1 tsp

Black pepper powder – 1/2 tsp

Soya sauce – 1 tsp

Tomato sauce – 1 tsp

Red chilli sauce – 1 tsp

Schezwan sauce – 1 tsp

Black pepper powder

Lemon juice – 1 tsp

method
Heat oil in a pan add little turmeric powder and remove from the flame.
Take a bowl , add Makai ki atta, maida, salt, ajwain powder, mixed herbs powder and turmeric oil. Mix thoroughly. Add warm water , kneed to make tight dough. Let it rest for 15 minutes.
Divide the dough into two parts. With help of rolling pin make thin roti. Prick with a fork and cut the roti into triangle shapes with the help of knife.
Now heat oil in a pan , deep fry the triangle both sides till it becomes golden brown. Take out from the oil and add red chilli powder and pepper powder mix well.

Chaat:
Heat little oil in a pan  Add onion, Capcicom, green chili and tomato, saute some time. Add schezwan sauce, tomato sauce,soya sauce and chilli sauce, saute and add boiled corn and salt cook two minutes. Switch off   flame  and mix well. Add lemon juice and black pepper powder ,mix well. Serve with makka chips.

KANCHA LANKA ACHAR

MIRCHI KA ACHAR

INGREDIENTS

  • Green chili ( big)- 10
  • Yellow mustard seeds – 50g
  • Fennel seeds – 2tsp
  • Lemon – 3
  • Salt to taste

METHOD

  • Wash the chili and soak all the excess water using kitchen napkin.
  • Using a blender grind the yellow mustard seeds and fennel seeds into fine powder.
  • Slit the chili and take out the seeds. Alternatively, you can also dissect the chili into small pieces.
  • In a glass jar, take the chili, yellow mustard powder, fennel seed powder, lemon and salt. Mix it all together.
  • The aachar is ready to be served with parantha, roti, naan.
  • You can also let it rest in the sun for 2-3 days and then use it.

INGREDIENTS

  • Curd – 500g
  • Boiled potatoes – 2 (mashed)
  • White turmeric (aamba ada) – 1 tsp (chopped)
  • Black pepper powder – 1/2 tsp
  • Roasted cumin powder – 1/2 tsp
  • Fresh mint leaves ( chopped) -1 tbsp
  • Mustard seeds – 1/2 tsp
  • Dry red chili -1
  • Oil – 4 drops
  • Rock salt to taste
  • Black salt ( optional) 1/2 tsp
  • METHOD
  • Husk the curd, add the mashed potatoes, salt, black pepper powder, white turmeric,, and cumin powder and mix it all together. 
  • Heat oil over a pan and add red chili and mustard seeds and let it crackle.
  • Add the crackled mustard seed and chili in the bowl of curd.
  • Sprinkle the fresh mint and mix it all together.
  • Let it rest for 20 minutes.
  • Serve it as a side dish.

KAKUDI TOMATO SALAD:

INGREDIENTS:

Cucumber (Chopped) – 1
Onion (Chopped) – 1
Tomato (Chopped) – 1
Green chili (Chopped) – 2
Garlic (chopped) – 1/2 tsp
Lemon juice – 1 tsp
Coriander leaves (Chopped) – 2tbsp
Sprouted moong – 2 tbsp
Chaat masala powder – 1/2 tsp
Roasted cumin powder – 1/2 tsp
Mango pickle oil – 1/2 tsp
Black salt – 1/2 tsp
Salt to taste
METHOD:
In a bowl take lemon juice, pickle oil, salt, black salt, chaat masala powder, cumin powder, chopped garlic and green chili. mix all the ingredients thoroughly.
Add chopped cucumber, tomato, onion and sprout moong and coriander leaves.
Mix it all together and serve it right away.

INGREDIENTS

  • Sago – 1/2 cup
  • Coconut scarped – ½ cup
  • Banana small(sliced) – 1p
  • Apple chopped -200gm
  • Grapes -100gm
  • Pomegranate kernels -1,2cup
  • Orange(peeled and sectioned) – 20 pcs
  • Yogurt -200gm
  • Chhena -200gm
  • Honey -1/4cup
  • Milk – 1 cup
  • Basil leaves – 10 + stone apple leaves 2 

METHOD:

  • Wash and soak sago for 4 hours in a bowl.
  • Whip curd and add to curd.
  • Add chopped apple, scrapped coconut, sliced banana, grapes, pomegranate kernel. Orange pieces, cheena, honey ( can use sugar also), milk and basil leaves and stone apple leaves.
  • Mix thoroughly.
  • You can also add seasonal fruits like mango, litchi, sapodilla(chiku/sapeta) and custard apple.
  • Serve cool.

RAW PAPAYA SALAD

RAW PAPAYA SALAD

INGREDIENTS

  • Raw papaya- 1cup
  • Garlic paste- 1tsp
  • Green chilly paste 1/2tsp
  • Lemon Juice-1 tbsp
  • Roasted and crushed  ground nuts-2 tbsp
  • Salad Oil / veg oIl-1 tbsp
  • Sugar/ honey-1 tsp
  • Salt to Taste

METHOD

  • Peel off  skin of raw papay and wash in water.
  • Take a vegetable peeler and take out a cup of peeled papaya and put it in a glass/ ceramic bowl.
  • Take garlic paste,chilly paste, lemon juice, salt, sugar/ honey  and  salad oil in a small glass bowl. Mix throughly.
  • Add the mixture to peeled papaya and marinate for 30 minutes.
  • Take out from the refrigerator ,add crushed groundnut powder and salt.Mix well.
  • You papaya salad is ready to serve.

 

Note: roasted sesame seeds, Sprouted mung or bengal gram can also be used in place of ground nut.
