BHAPA DAHI

INGREDIENTS:
Hung curd – 500 ml
Condensed milk – 300 ml

Lemon zest – 1/2 tsp
Vanilla extract – 1 tsp
Cashewnuts chopped – 2 tbsp
Cardamom powder – 1 tsp
METHOD:
1. Take a mixing bowl add thick curd, condensed milk, vanilla extract and cardamom powder mix well .
2. Add chopped cashewnuts and lemon zest mix properly.
3. Take six earthen bowl / pudding bowl. pour the mixture to 3/4th of bowl and cover with aluminium foil. Steam for 5 – 6 minutes.
4. Cool down and take out the steamed curd and refrigerate for 3 hours.
5. Tasty and delicious bengoli steamed  sweet curd (Bhapa Doi) is ready to serve with chocolate syrup.
6. Alternatively you can microwave also.

NAVARATNA KORMA

INGREDIENTS
-Cauliflower – 350g
-Paneer( cottage cheese) – 200g
– Carrot – 100 g
– Beans – 150g
– Peas – 100g
– Tomato – 1
– Onion –  1
– Ginger – 1″
– Garlic cloves – 8/ 10
-Green chili – 2
– Cinnamon 1inch
– Green cardamom – 2
– Black cumin – 1/4 TSP
– Mace (jabitri) – 1/8 flower
– cummin seed( jeera) – 1tsp
-Fennel seed – 1/2tsp
-Clove – 3
– coriander seeds -1 tsp
– Black pepper – 8
– Watermelon seeds(charmagaj) – 1tbsp
-Curd – 2 tbsp
-Coriander leaves(chopped) – 2 tbsp
– Red chilli powder – 1tsp
– Turmeric powder – 1/2 tsp
– Oil
Salt to taste


Method
  •  wash, peel and dice the cauliflower, paneer ,carrot, beans in small pieces.
  • Fry the cauliflower, paneer, carrot, beans one by one.
  • In a  pan heat some oil and add 1/4 tsp fennel seed, cinnamon, green cardamom, black cumin, mace, 1/2tsp cumin seed, watermelon seed, coriander seeds, black pepper.
  • All the spices have to put in the pan together. – add garlic clove, chopped ginger, onion and tomato and fry it for sometime. –
  • Take it out if the flame and let it cool for some time.
  • Grind it into a paste – in a separate pan heat very little oil and saute rest of the cumin and fennel seed, and 3 clove green chili.
  • Add the peas, turmeric, salt and chili powder and saute it for some time. –
  • Add the paste and stir it for some time – add curd and all the fried vegetables and mix it all together. –
  • Add 3/4th cup of water and cover it.
  • Cook it over low flame till all water evaporates ( or according to the thickness of the gravy desired) –
  • Take off the cover and add chopped coriander leaves and cream(optional) – serve it with roti, naan, paranthe or rice.
  • The garlic and onion is optional and one can avoid it if desired Navratna korma.
